The various vapours and odours that arise in the kitchen are cleaned of grease and other substances by the metal filter and then discharged to the outside. The exhaust air pipe can either be installed in the exhaust air duct or routed to the outside as required or desired.

Not all buildings offer the option of connecting the extractor bonnet to a ventilation system. In this case, Kaiser extractor bonnets can be used as air filters.

Uniform air extraction can be provided by extractor bonnets of various designs. Such extractor bonnets provide a permanent air supply through the slots around the entire perimeter of the front flap, behind which the activated charcoal filters or grease filters are concealed. Edge extraction is possible due to the Venturi effect, named after the Italian physicist Giovanni Venturi, who discovered it.
